Lime Chicken Enchiladas Recipe

Ingredients
2 whole chicken breasts, cooked
2 cups sour cream
1/2 cup half and half
1/2 teaspoon salt
Pinch of cayenne pepper
Juice and grated zest of 1 lime
8 corn tortillas
1 cup diced onion
1 cup shredded Cheddar cheese
Directions
Shred the chicken with 2 forks, discarding the skin and bones.
Combine the sour cream, half and half, salt, cayenne pepper and lime juice and zest in a medium bowl; whisk until smooth.
Soften each tortilla for a few seconds in a small amount of hot oil in a large skillet over medium high heat, turning once.
Remove excess oil from tortillas by patting dry.
Fill each tortilla with shredded chicken and chopped onion.
Roll up and place in a lightly greased 9x13 inch baking dish.
Top with the sour cream mixture and sprinkle with Cheddar cheese.
Bake at 400 degrees for 20 to 25 minutes.
