Lime Avocado Mold Recipe

Ingredients
4 tablespoons gelatin
2 cups hot water
3/4 cup raw honey
2 cups homemade cottage cheese juice of i orange
1 cup lime juice, or the juice of 5 limes
1/2 teaspoon sea salt
1/2 cup homemade mayonnaise
2 cups unsweetened pineapple chunks, canned or fresh-cooked
1 large avocado, peeled and cubed
1/4 cup pimento stuffed olives, thinly sliced
Directions
Dissolve the gelatin in the hot water.
Add honey and stir.
Put homemade cottage cheese, orange juice, lime juice, sea salt, and mavonnaise into blender and blend until creamy.
Blend the cheese and the gelatin mixture and chill until partially set.
Add remaining ingredients.
Turn into an 8-cup mold.
Chill until firm.
Unmold on greens.
Garnish with ripe olives.
