Lime Tarts Recipe
Ingredients
| Egg yolks | 3 | |
| Sugar | 1/4 Cup (16 tbs) | |
| Lime juice | 1/4 Cup (16 tbs) | |
| Lime rind | 2 Teaspoon, grated | |
| Heavy cream | 1 Cup (16 tbs), Whipped | |
| 6 tart shells, baked | ||
Directions
MAKING
1) In top part of double boiler blend egg yolks and sugar till thick.
2) Mix lime juice and beat.
3) Cook over boiling water and stir till thick.
4) Add lime rind and stir.
5) Place in freezer to chill.
SERVING
6) Before serving, fold into whipped cream. Add some green food coloring for tint. Serve into
baked tart shells.
