Lime Soup Recipe
Ingredients
| Chicken broth | 4 Cup (16 tbs) | |
| Chicken breast halves | 2 , skinned | |
| 1/3 cup alphabet pasta | ||
| Red onion | 1/4 Cup (16 tbs), chopped | |
| Lime juice | 1/4 Cup (16 tbs) | |
| Parsley | 1/3 Cup (16 tbs), chopped | |
| Ripe avocado | 1 Small, peeled | |
Directions
In a saucepan, bring broth to a boil.
Add chicken; reduce heat to simmer; cover and cook 20 minutes.
Remove chicken from broth; cool slightly.
Bone chicken and shred.
Set aside.
Reheat broth to boiling; add pasta.
Reduce heat; cook for 10 minutes.
Add onion, lime juice, chicken, and parsley.
Add avocado.
Cover and simmer for 5 minutes.
Add chicken; reduce heat to simmer; cover and cook 20 minutes.
