Lime Party Pie Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Cold water | 1/4 Cup (16 tbs) | |
| Eggs | 4 | |
| Sugar | 1/2 Cup (16 tbs) | |
| Lime rind | 1 1/2 Teaspoon, grated | |
| Lime juice | 1/2 Cup (16 tbs) | |
| Whipping cream | 1/2 Cup (16 tbs), Whipped | |
| Pastry shell - 1 of 9-inches, baked | ||

Directions
MAKING
1) In water, soften the gelatin and set the mixture aside.
2) In top of a double boiler combine together the egg yolks, lime rind and juice and ½ cup of sugar and beat well.
3) Cook over boiling water, constantly stirring, till the mixture is thick and smooth. This usually takes about 15 minutes.
4) Add the gelatin and stir well. Let the mixture cool.
5) Beat the egg whites till they are foamy.
6) Add ½ cup sugar very gradually, 1 tablespoon at a time, beating well till stiff peaks start to form.
7) Into the cooked mixture, fold the whipped cream and egg whites. Spoon the concoction into the pastry shell.
8) Chill the pie for several hours, till the filling is set.
SERVING
9) Put the chilled pie on a decorative serving platter, garnish with slices of lime, slice into wedges and serve while still chilled. A dollop of whipped cream can be served on the side for a completely and delectable dessert.
