Lime Jelly with Cucumber and Apple Recipe
Ingredients
| 300 gms cucumber, peeled, seeded and thinly sliced | ||
| Apples | 500 Gram, unpeeled | |
| 150 gms lime jelly crystals | ||
| 420 ml Limca or any lime-based soda | ||
| Lime juice | 4 Tablespoon | |
| Mint | 1 Tablespoon, chopped | |
| Salt | 1/2 Teaspoon | |
| 1/2 tsp freshly ground white pepper | ||
| Marinade | ||
| Olive oil | 3 Tablespoon | |
| White wine vinegar | 1 Tablespoon | |
| Mustard powder | 1/2 Teaspoon | |
Directions
GETTING READY
1) In a bowl, combine all the ingredients for marinade.
MAKING
2) In the same bowl, add cucumber and apples and marinate in the refrigerator for 30 minutes.
3) Mix lime jelly crystals along with 150 ml Limca.
4) Over the gentle heat, place the bowl and stir with a thin skewer till jelly dissolves.
5) Remove from heat and add the remaining Limca, mint, lime juice and seasoning and mix well.
6) Spoon into a wet mould and semi-set over the ice or in the refrigerator.
7) Using a metal spoon, fold it occasionally.
8) Place it in the refrigerator till completely sets.
9) Turn out jelly on a flat, wet platter.

10) Garnish with marinated cucumber and apples and serve.
