Lime Grilled Turkey Cutlet Sandwiches Recipe
Ingredients
4 turkey cutlets (1/4 inch thick, about 1/2 pound total)
1/4 cup lime juice
1 tablespoon olive or other vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup mayonnaise
2 tablespoons chopped cilantro (optional)
1 teaspoon grated lime zest (optional)
1/2 avocado
4 club rolls or other hard rolls
4 lettuce leaves
1/4 cup cranberry sauce
Directions
1 Preheat the broiler. Line a broiler pan with foil and lightly grease the foil.
2 Place the turkey cutlets in a shallow dish and sprinkle them with 2 tablespoons of the lime juice, the olive oil, salt and pepper. Turn the cutlets to coat them thoroughly with the seasonings.
3 Place the turkey cutlets on the prepared broiler pan and broil them
4 inches from the heat for 3 minutes per side.
4 Meanwhile, in a small bowl, stir together 1 tablespoon of the lime juice, the mayonnaise, and the cilantro and lime zest (if using).
5 Slice the avocado and toss it with the remaining 1 tablespoon lime juice.
6 Split the rolls lengthwise and place them cut-side up under the broiler for about 30 seconds, or until lightly toasted.
7 Spread both halves of each roll with the lime mayonnaise. Place a lettuce leaf and a turkey cutlet on half of each roll and top with avocado slices and a spoonful of cranberry sauce.
