Ingredients
1/2 cup fresh lime juice, divided
1/3 cup finely chopped plum
2 tablespoons finely chopped tomato
1 tablespoon brown sugar
1 tablespoon finely chopped green onions
2 drops hot sauce
2 (4-ounce) boned center-cut pork loin chops (about 3/4 inch thick)
1 teaspoon chopped fresh thyme
1/8 teaspoon salt
1/8 teaspoon pepper

Directions
1. Combine 1/2 teaspoon lime juice, plums, and next 4 ingredients; stir well. Cover relish, and chill.
2. Place chops between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness using a meat mallet or rolling pin. Place chops in a shallow dish; add remaining lime juice, thyme, salt, and pepper. Cover and marinate in refrigerator 1 hour, turning chops occasionally.
3. Prepare grill. Remove chops from dish, reserving marinade. Place chops on grill rack coated with cooking spray; cover and grill 6 minutes on each side or until done, basting occasionally with reserved marinade. Serve chops with plum relish.
