Directions

In a large saucepan, combine sugar and water. Heat until the ingredients are thoroughly combined and no longer cloudy. Remove from heat. Add lime juice, zest and coconut. Pour into an ice-cream maker and process according to manufacturers direction.

If you do not have an ice cream maker, simply pour the contents into a 9 X 12 baking dish and put in the freezer. Every hour, fluff the mixture with a fork until the entire dish is frozen.

For a great serving idea, trim the ends off the lime halves to create a flat spot. Clean out the juiced lime halves with spoon or paring knife. Scoop the solid sorbet into the lime cups and put back in the freezer.
