| Tomatoes | 1 , strained | |
| Cayenne pepper | 1/8 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cooked lima beans - 2 cup | ||
| Cheese | 1 Cup (16 tbs), grated | |
| Buttered cracker crumbs - 1/2 cup | ||

1. Preheat the oven

2. Slice the pepper and then boil them in salted water for five minutes till cooked through. Then drain and set aside.
3. Brown onion in 2 tablespoons fat; add tomatoes, seasonings and beans. Simmer for 20 minutes.
Remove from heat; add cheese.
4. Fill green peppers with bean mixture; sprinkle with crumbs.
Place in shallow pan in 1/2 inch hot water. Bake in 350-degree oven for 20 to 30 minutes.
