Lima In Pimiento Cheese Sauce Recipe
Ingredients
1 pound shelled fresh lima beans
1 cup boiling water
1/4 cup chopped onion
2 tablespoons butter or margarine, melted
1 1/2 tablespoons all purpose flour
1 cup milk
1 teaspoon salt
1/8 teaspoon pepper
1 (2 ounce) jar diced pimiento, drained
1 cup (4 ounces) shredded Cheddar cheese
4 slices bacon, cooked and crumbled
Directions
Cook beans in 1 cup boiling water 20 minutes or until tender; drain.
Saute onion in butter until tender.
Add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
Add salt, pepper, pimiento, and cheese; stir until cheese melts.
Stir beans into sauce mixture.
Spoon mixture into serving bowl, and sprinkle bacon over top.
