Lima Bean Spread Recipe
Ingredients
3 cups cooked fresh or frozen lima beans
1 teaspoon dried cilantro leaves
2 tablespoons fresh minced parsley
1/2 cup lemon juice
1/2 teaspoon ground cumin
1 tablespoon minced garlic
1/2 teaspoon cayenne pepper
2 tablespoons minced red onion
1/4 teaspoon black pepper
Directions
1. Place lima beans in a blender or food processor and puree until smooth.
2. Place pureed beans in a bowl and blend in lemon juice, garlic, red onion, cilantro, parsley, cumin, cayenne, and black pepper.
3. Cover and chill for 4 hours before serving.
