Lima Bean-Ham Chowder Recipe

Ingredients
1 1/2 c. large dried lima beans
1 meaty ham hock
1 1/2 tsp. salt
1/2c. chopped green pepper
11ge. onion, chopped
Butter
1 1/2 c. cream-style corn
2 c. scalded milk
Directions
Soak beans overnight in 1 quart water, add ham hock.
Simmer for 1 hour and 30 minutes or until beans are tender.
Remove ham hock from beans; shred meat.
Drain beans, reserving 1 cup liquid.
Mash beans; add salt.
Saute green pepper and onion in butter.
Mix beans, ham and reserved bean liquid; stir in corn and milk.
Heat through gently.
Do not boil.
Serve sprinkled with paprika, if desired.
