Directions

Cover beans with cold water and soak overnight.
Add 1 teaspoon salt.
Simmer until tender and drain.
Heat salad oil, and saute onion until just golden.
Put beans in shallow casserole, and add oil and onion, scraping pan thoroughly.
Add green pepper, salt, 2 teaspoons sugar, and cayenne.
Combine well, so that beans glisten with oil.
Top mixture with chopped canned tomatoes, sprinkle lightly with sugar, salt, and pepper; finish with grated cheese.
Bake uncovered in oven at 350°F. about 35 minutes.
