Lima Beans With Curry Sauce Recipe
Ingredients
| 1 10-oz. package frozen baby lima beans | ||
| Bacon Slices | 2 | |
| Garlic | 1 Clove (5gm), minced | |
| 1/2 medium-sized onion, minced | ||
| Curry powder | 1/2 Teaspoon | |
| 1 tsp dry white wine or milk | ||
| White Sauce with Mushrooms | ||
| 1/4 cup sour half and half | ||
| Homemade onion rings (enough to cover top of casserole) | ||
Directions
Steam or boil the beans in a small amount of salted water.
Drain well.
Fry bacon until crisp.
Remove from pan, drain, and dice.
Saute the garlic, onion, and curry powder in the drippings.
When onion is soft, about 5 minutes, stir in the wine, White Sauce with Mushrooms, and half and half.
Add beans and bacon.
Put into greased 1-quart ovenproof casserole.
Top with onion rings.
Bake, uncovered, at 350° about 15 minutes, or until heated through.
To make homemade onion rings, slice 1 large or 2 small onions, dip into potato flour or rice flour and fry in safflower or peanut oil. Or omit and substitute toasted sesame seeds.
