Lima Beans with Canadian Bacon Recipe
Ingredients
| Lima beans | 4 Cup (16 tbs) | |
| Canadian Bacon - 6 slices, coarsely chopped | ||
| Onion | 2 Tablespoon | |
| Butter | 2 Tablespoon | |
| All purpose flour | 2 Tablespoon | |
| Brown sugar | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Turmeric | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Tomatoes - 3 medium, peeled and coarsely chopped | ||
Directions
MAKING
1) Into a pot of hot salted water, cook the beans
2) Drain the beans into a colander, reserving the liquid
3) Into a skillet, fry the bacon for about 3 minutes and keep aside
4) Into the skillet, melt some butter and saute the onion till tender
5) Combine the flour, brown sugar salt, turmeric and pepper to the onion and saute
6) Add in the reserved bean water and cook over a medium heat till the sauce is thickened
7) Add in the cooked beans and heat the mixture through
8) Into a greased 1 1/2 quart casserole layer the base with half of the beans and add in the tomatoes and bacon
9) Top with rest of the beans
10) Cover with the lid and bake at 350 F for about 20 minutes
SERVING
11) Serve the casserole warm
