Lima Beans With Apples Recipe

Ingredients
1 pound (2 1/2 cups) dried lima beans
2 quarts (8 cups) water
1 teaspoon salt
2 large onions, sliced
3 tablespoons bacon drippings or salad oil
1/4 teaspoon turmeric
1/2 teaspoon allspice
1/4 teaspoon pepper
1 teaspoon salt
2 tart apples, peeled, cored, and chopped
Directions
Wash beans; place in a heavy kettle with the water; cover, bring to a boil, and simmer for 2 minutes.
Remove from heat and let soak 1 hour.
Add salt, bring to a boil, and simmer for 1 hour.
In a heavy frying pan, saute the onions in the bacon drippings until golden brown.
Add the turmeric, allspice, pepper, salt, and apples.
Stirring, continue cooking until apples are barely tender.
Stir in 1 cup of the bean liquid and the drained beans and continue cooking for 10 minutes.
