Lima Bean Ham Chowder Recipe
Ingredients
| Large lima beans | 1 1/2 Cup (16 tbs) | |
| 1 pound meaty ham hocks | ||
| Onion | 1 Cup (16 tbs), chopped | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| Butter/Margarine | 2 Tablespoon | |
| Milk | 2 Cup (16 tbs) | |
| 1 8 3/4-ounce can cream-style corn | ||
Directions
Cover beans with 4 cups water.
Bring to boiling; simmer 2 minutes.
Remove from heat; let stand 1 hour.
Add ham hocks; cover and simmer till tender, about 1 1/2 hours.
Add 1 teaspoon salt during last 30 minutes of cooking.
Remove ham hocks.
Mash beans slightly.
Remove ham from bones; shred and set aside.
Discard bones.
Cook onion and green pepper in margarine till tender.
Add to limas along with ham, milk, and corn.
Heat, but do not boil.
Season to taste.
