Lima Bean Ham Chowder Recipe
Ingredients
| Large lima beans | 1 1/2 Cup (16 tbs), dried | |
| 1 meaty ham hock | ||
| Salt | 1 1/2 Teaspoon | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| 1 Ige. onion, chopped | ||
| Butter | ||
| 1 1/2 c. cream-style corn | ||
| Milk | 2 Cup (16 tbs), scalded | |
Directions
Soak beans overnight in 1 quart water; add ham hock.
Simmer for 1 hour and 30 minutes or until beans are tender.
Remove ham hock from beans; shred meat.
Drain beans, reserving 1 cup liquid.
Mash beans; add salt.
Saute green pepper and onion in butter.
Mix beans, ham and reserved bean liquid; stir in corn and milk.
Heat through gently.
Do not boil.
