Light Lemon Tarts Recipe
Ingredients
| 4 eggs, beaten well | ||
| Sugar | 1 Cup (16 tbs) | |
| Butter | 1/4 Cup (16 tbs), melted | |
| Salt | 1 Pinch | |
| Juice and grated rind of 2 Ige. lemons | ||
| 1 recipe pie pastry | ||
Directions
Combine eggs, sugar, butter, salt, lemon juice and rind; mix well.
Line twelve tart shells with pastry; fill with lemon mixture.
Bake at 425 degrees for 25 to 30 minutes.
