Light 'N' Crispy Buttermilk Waffles Recipe
Ingredients

| Yellow cornmeal | 1/2 Cup (16 tbs) | |
| Rolled oats | 1 Cup (16 tbs) | |
| Baking powder | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Eggs | 2 | |
| 1/2 cup melted bacon drippings or other shortening, cooled | ||
| Buttermilk | 3 Cup (16 tbs) | |
Directions
Put all dry ingredients into a bowl, break in the eggs, add the bacon drippings, and stir in the buttermilk.
Let the batter stand about 15 to 30 minutes, until it almost doubles in quantity (because of the large amount of baking powder).
Bake waffles in a waffle iron according to manufacturer's instructions.
