Light Lemon Gelatin Recipe
Ingredients
| Lemon juice | 1/3 Cup (16 tbs), squeezed | |
| Water | 1 1/2 Cup (16 tbs) | |
| Unflavored gelatin | 1 | |
| Honey | 1/4 Cup (16 tbs) | |
| Lemon extract | 1/4 Teaspoon | |
| Natural yellow food coloring - about 6 drops | ||
Directions
MAKING
1 In a medium-size bowl, add lemon juice and 1 cup of the water.
2 In a small saucepan, sprinkle gelatin over remaining water.
3 Allow to soften for 2 minutes.
4 Stir in honey and heat over medium heat.
5 Blend until the gelatin dissolves completely.
6 Combine with the juice mixture.
7 Stir in lemon extract and food coloring.
8 Place in the refrigerator and chill until set.
SERVING
9 Serve as desired.
