 Lentils2 Cup (16 tbs)
 Olive oil6 Tablespoon
 Carrots1 Cup (16 tbs), finley diced
 4 tablespoons plus 2 teaspoons red wine vinegar
 Red onions1 Cup (16 tbs), finley diced
 Bouquet garni of 1/2 teaspoon dried thyme leaves, 1 bay leaf, 8 peppercorns and 4 whole cloves tied in cheesecloth
 Thinly sliced red onion for garnish, about 1 onion
 Small chunks goat cheese such as Montrachet or boucheron for garnish, about 6 ounces
 4 large cloves garlic, chopped
 Water5 Cup (16 tbs)
 Ground black pepper1 To taste
 Salt To Taste

Directions

Combine lentils, carrots, diced red onion, bouquet garni, garlic and water in large pot and simmer until lentils are tender but not mushy.
They should hold their shape.
Drain off liquid; remove bouquet garni and season lentils with salt and pepper, olive oil and vinegar.
Refrigerate, if desired.
To serve, toss with slices of red onion and chunks of goat cheese.
NOTE TO COOK: Carry to party in salad bowl, or carry in plastic container.
