2 cups (1 pound) dried lentils
 
1 1/2 quarts water
 
1 small onion, sliced
 
1 carrot, quartered
 
2 celery stalks with leaves, quartered
 
1 clove garlic, crushed
 
Salt

Directions

1. Pick over the lentils; wash and drain. Put in a kettle with the water, onion, carrot, celery, and garlic.
2. Bring to a boil, cover, and simmer until the lentils are tender, about 1 hour. Season with salt to taste.
