Lentil And Vegetable Stew Recipe

Ingredients
8 cups Vegetable Stock
1 cup dried lentils
1 large sweet red pepper, cut into narrow, 1-inch-long strips
6 scallions, sliced
3 medium-size carrots, sliced
1 small zucchini, sliced
1 tablespoon tamari or soy sauce
1/4 teaspoon oregano
1/4 teaspoon rosemary
Directions
Place the stock and lentils in a stockpot over medium-high heat and bring to a boil.
Add the peppers, scallions, carrots, zucchini, tamari, oregano, and rosemary.
Bring to a boil.
Cover, reduce heat, and simmer for about 45 minutes.
