Ingredients
| Olive oil | 2 Tablespoon | |
| Large onion-1 chopped | ||
| Garlic | 6 Clove (5gm) | |
| Raw brown rice-1/2 cup | ||
| Green pepper | 1 To taste, chopped | |
| Cinnamon | 1/4 Teaspoon | |
| Cayenne pepper | 1/4 Teaspoon | |
| Paprika | 1 Tablespoon | |
| Dried parsley | 2 Tablespoon | |
| Mint | 1 Tablespoon, chopped | |
| Lentils | 2 Cup (16 tbs), dried | |
| Water or vegetable stock-10 cups | ||
| Dried apricots | 1 Cup (16 tbs), chopped | |
| Salt | 1 Teaspoon | |
| Black pepper | 1 Teaspoon | |
Directions
MAKING
1.Take a soup kettle, and heat oil in it.
2.Add the garlic and saute.
3.Toss in the onion,and saute till transparent
3.Add the rice and the pepper.Saute for a few minutes.
4.Add remaining ingredients except salt and pepper. Cook on low heat, for upto an hour or until lentils are soft and rice is cooked
5.Remove from heat, and add seasonings
SERVING
6.Serve hot in large bowls.
