Lentil Soup with Frankfurters Recipe
Ingredients
| 250 g / 1/2 lb brown lentils, soakedjor 1-2 hr. | ||
| 1.8 l / 3 pt / 7 1/2 cups beef stock | ||
| Butter | 2 Tablespoon | |
| 1 onion, peeled and chopped | ||
| Carrots | 2 , chopped | |
| 2 legs of celery, chopped | ||
| 4 frankfurters, cut into rings | ||
| Salt | To Taste | |
| black pepper | 1 | |
Directions
Heat butter in a saucepan, and gently fry vegetables until soft.
Add lentils and stock, and simmer for 1 1/2-2 hr, or until lentils are cooked.
Add frankfurters 30 min before serving.
Season with salt and pepper.
