Ingredients

 
Lentils - 1 cup
 
Water - 6 cups
 
Beef broth - 2 cups, fresh or canned
 
Butter - 2 tablespoons
 
Onions - 1/2 cup, chopped
 
Garlic clove- 1, minced
 
Salt - 1 teaspoon
 
Chili peppers - 1/4 teaspoon, dried, ground
 
Indian curry powder - 2 teaspoons
 
Lemon or lime juice - 1 teaspoon

Directions

GETTING READY
1) Rinse the lentils thoroughly with cold water.

MAKING
2) In a saucepan, bring the lentils, water and beef broth to a boil, cover and cook over a low heat for 1 hour, or until tender.
3) In a skillet, saute the onions and garlic in the butter for 5 minutes.
4) Stir in the salt, chili peppers and curry powder, cook for 2 minutes.
5) Stir into the lentils and cook over a low heat for 20 minutes.
6) In an electric blender or food mill, process the lentil mixture until pureed.
7) Taste and adjust the seasoning, if required and stir in the lemon juice; add a little broth, if thick.

SERVING
8) Laddle into soup bowls and serve immediately.
