Lentil Soup Recipe
Ingredients
| 8 oz. washed lentils, soaked overnight, optional | ||
| Little chopped bacon | ||
| Onion | 1 , chopped | |
| Carrot | 1 , chopped | |
| 1 pint stock or water | ||
| Little chopped thyme or parsley | ||
| Seasoning | ||
| Butter | 1 Ounce | |
| Flour | 1/2 Ounce | |
| Milk | 1/2 Pint | |
| Chopped parsley | ||
Directions
Put the lentils, bacon, chopped onion, carrot and stock or water into a pan.
Add thyme or parsley and simmer gently for about 1 1/2 hours.
Sieve the mixture.
Meanwhile make a very thin sauce with the butter, flour and milk.
Add the lentil puree and reheat.
Season to taste.
Garnish with chopped parsley.
