Ingredients

 Olive oil1 Tablespoon
 Lentils2 Cup (16 tbs), dried
 Onion1 Cup (16 tbs), chopped
 Carrots1 Cup (16 tbs), chopped
 Parsley1/4 Cup (16 tbs), chopped
 Garlic2 Clove (5gm), minced
 Salt3/4 Teaspoon
 Pepper1/2 Teaspoon
 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
 Water8 Cup (16 tbs)
 Tomatoes2 Cup (16 tbs), chopped
 2 tablespoons white or red wine vinegar

Directions

In a soup pot heat olive oil over medium heat.
Add lentils, onion, carrots, parsley, garlic, salt, pepper and thyme.
Saute over medium heat for 15 minutes.
Add water and tomatoes.
Cover; reduce heat.
Simmer for 1 1/2 hours.
Add vinegar.
Simmer for 30 minutes longer.
