Lentil Salad With Fresh Herbs Recipe
Ingredients
| 5 c. water, vegetable cooking liquid, or broth | ||
| Lentils | 1 Pound, dried | |
| Red onion | 1 Cup (16 tbs), chopped | |
| Garlic | 4 Clove (5gm), chopped | |
| 1 rib celery, chopped | ||
| Carrot | 1 , chopped | |
| Thyme | 1 Tablespoon | |
| Sweet basil | 1 Tablespoon | |
| Oregano | 1 Tablespoon | |
| Parsley | 1/2 Cup (16 tbs), chopped | |
| Green onions | 5 , minced | |
| Green pepper | 1 , chopped | |
Directions
Bring water to a boil in a large kettle; add remaining ingredients, except green onion and green pepper.
Turn heat down, cover, and simmer 1 1/2 hours or until lentils are tender.
You may need to add a little water as lentils cook.
Pour dressing over cooked lentils.
Let cool and refrigerate.
Add salt and pepper as desired and garnish with onions and green pepper before serving.
