Ingredients

 
1 cup dried brown lentils, sorted
 
2 cups water
 
3/4 cup chopped onion
 
1 cup chopped fresh mushrooms
 
1 teaspoon beef or vegetable bouillon granules
 
3/4 teaspoon dried thyme
 
1/4 teaspoon ground allspice
 
1/8 teaspoon ground black pepper

Directions

1. Place all the ingredients in a medium-sized pot, and bring the mixture to a boil over high heat. Reduce the heat to low, cover, and simmer for 25 to 30 minutes, or until the lentils are very soft and all of the liquid has been absorbed. (Periodically check the pot during cooking, and add more water if needed.)
2. Cool the mixture slightly, and place in a food processor or blender. Process until smooth. Transfer the mixture to a serving dish, cover, and chill for several hours.
