Lentil Omelette Recipe
Ingredients
| 60 g/2 oz cooked brown or green lentils | ||
| Garlic to taste | ||
| 1 tsp seed or other mustard | ||
| Roughly chopped parsley | ||
| 2 eggs, lightly beaten | ||
| Ground black pepper | 1 To taste | |
| Olive oil for frying | ||
| Salt | To Taste | |
Directions
Flavour the cooked lentils with garlic, mustard and parsley, bind with the eggs, season, and cook as for Spanish Omelette in quite a generous amount of olive oil.
