 60 g/2 oz cooked brown or green lentils
 Garlic to taste
 1 tsp seed or other mustard
 Roughly chopped parsley
 2 eggs, lightly beaten
 Ground black pepper1 To taste
 Olive oil for frying
 Salt To Taste

Directions

Flavour the cooked lentils with garlic, mustard and parsley, bind with the eggs, season, and cook as for Spanish Omelette in quite a generous amount of olive oil.
