Lentil Curry with Rice Recipe
Ingredients
| Lentils | 1⁄2 Cup (8 tbs), dried | |
| Milk | 1⁄2 Cup (8 tbs) | |
| Onion | 1 , chopped | |
| Shortening | 3 Tablespoon | |
| Water | 1 1⁄2 Cup (24 tbs) | |
| Curry powder | 1 Teaspoon | |
| Salt and pepper | 1 | |
| Fresh lemon juice | 1 Tablespoon | |
| Cooked rice | 1 1⁄2 Cup (24 tbs) |
Directions
GETTING READY
1) Clean and wash lentils. Soak overnight in milk in refrigerator and keep aside.
MAKING
2) In a skillet heat shortening, brown onion.
3) Stir in water, curry powder, lentils, and milk over simmering heat for 1 hour till tender.
4) Add water and adjust salt and pepper to taste.
5) Mix in lemon juice.
SERVING
6) Serve on the bed of rice.
