Lentil And Wheat Berry Pilaf Recipe
Ingredients
1/2 cup wheat berries
2 green onions, white and green chopped separately
1 1/4 cups Chicken Stock or Vegetable Stock or low-sodium chicken broth
1 cup water
1/4 teaspoon each ground sage and crushed red pepper flakes
1/4 teaspoon salt, or to taste
2 medium-size carrots, peeled and finely chopped
2/3 cup dried red lentils
Directions
1 Rinse the wheat berries and place them in a medium-size bowl with enough cool water to cover.
Soak for 12 hours in the refrigerator.
Drain.
2 In a medium-size saucepan, combine the wheat berries with the white part of the green onions, stock, water, sage, red pepperflakes, and salt.
Bring to a boil overmoderate heat.
Lowerthe heat and simmer, covered, for 40 minutes.
Stir in the carrots and lentils and simmer, covered, 10 minutes more or just until the lentils are tender.
Remove from the heat, stir in the green onion tops, and let stand for 10 minutes.
