|Brown rice||1 Cup (16 tbs), cooked, drained|
|Canned lentils||1 Can (10 oz)|
|Canned chopped tomatoes||1 Can (10 oz)|
|Onion||1 , chopped finely|
|Garlic clove||2 , finely chopped|
|Ginger||To Taste, finely chopped|
|Green chili||3 Medium, chopped finely (or to taste)|
|Turmeric||2 Teaspoon (as needed)|
|Sesame oil/Vegetable oil||1 Tablespoon|

1. In a wok, heat oil and saute onion, garlic, ginger, and chili for a couple of minutes or until softened.
2. Add turmeric, pour some water and fry for a few minutes.
3. Stir in lentils and chopped tomatoes. Season with salt and simmer for 15 minutes.
4. Serve curry with brown rice and enjoy!
