Lemony Stuffed Flounder Recipe
Lemony stuffed flounder is a herbed and vegetable seafish preparation. Microwave cooked, the stuffing is made with a herb stuffing mix combined with lightly cooked veggies and lemon peel. Finished with the fish fillets placed on the stuffed and cooked with topping of lemon slices and a dash of paprika, it is tangy and flavorful.
Ingredients

| Water | 1/2 Cup (16 tbs) | |
| Herb | 2 Cup (16 tbs), seasoned | |
| Lemon peel | 1/2 Teaspoon, grated | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Shredded carrot | 1/2 Cup (16 tbs) | |
| 1 pound flounder fillets | ||
| Paprika for garnish | ||
| Lemon slices for garnish | ||
Directions
In 4-cup glass measure, combine 4 tablespoons of the butter and water.
Microwave, uncovered, on HIGH 1 1/2 minutes or until butter is melted.
Stir in stuffing mix and lemon peel; set aside.
In 10-inch microwave-safe pie plate, combine remaining 1 tablespoon butter, onion and carrot.
Cover with waxed paper; microwave on HIGH 3 minutes or until vegetables are tender, stirring once during cooking.
Stir into stuffing mixture.
Make 4 mounds of stuffing in same pie plate.
Divide fish into 4 parts and arrange over stuffing.
Sprinkle with paprika and top with lemon slices.
Cover with waxed paper; microwave on HIGH 8 minutes or until fish flakes easily when tested with fork, rotating dish once during cooking.
Let stand, covered, 5 minutes.
