Lentil Cucumber Salad With Lemon And Mustard Dressing Recipe Video
Ingredients
2 cup green or red lentils
1/2 cup chopped red bell pepper
1/2 cup chopped peeled and seeded cucumber
1/3 cup finely chopped red onion
1/4 cup chopped pitted Kalamata olives
1/4 cup extra virgin olive oil
3 Tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon finely grated lemon peel
2 ounce crumbled feta cheese
1/4 cup rough chopped fresh mint
Directions
Cook lentils according to package directions until tender. Let cool then transfer to a large bowl. Add red bell pepper, cucumber, onion and olives to bowl.
In a small bowl whisk olive oil, lemon juice, mustard and lemon peel together then pour over lentil mixture. Toss to coat. Add feta cheese and mint to bowl, toss again and serve.
