Lemony Lamb Meatballs Recipe

Ingredients
1 1/2 Ibs lean ground lamb
1/2 cup unsalted crackers, crumbled
1 whole egg
1 tsp dried basil
2 cups water
2 cubes of beef broth
1 tbsp cornstarch
2 tbsp cold water
3 tbsp lemon juice
Directions
In a bowl, mix ground lamb, cracker crumbs, egg, salt, pepper and basil.
Shape into 1 inch (2.5 cm) meatballs.
Set aside.
In a casserole dish, bring water to a boil.
Dissolve beef broth cubes.
Add meatballs.
Cook 15 minutes.
Remove meatballs.
Keep warm.
Meanwhile, dilute corn starch in cold water.
Add to lamb cooking broth.
Bring to a boil.
Cook 5 minutes.
Fold in lemon juice.
Pour over meatballs.
