Lemony Bars Recipe
Ingredients

| All purpose flour | 1 Cup (16 tbs) | |
| Sugar | 3/4 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| 2 cups Rice cereal crushed to 1/2 cup | ||
| Butter/Margarine | 1/2 Cup (16 tbs) | |
| Eggs | 2 , beaten (Topping) | |
| Sugar | 3/4 Cup (16 tbs) (Topping) | |
| All purpose flour | 2 Tablespoon (Topping) | |
| Baking powder | 1/4 Teaspoon (Topping) | |
| Lemon juice | 4 Teaspoon (Topping) | |
| Lemon peel | 1 Teaspoon, grated (Topping) | |
Directions
Preheat oven to 350°F.
Grease 9-inch square baking pan.
To prepare base, sift together flour, sugar, baking powder and salt.
Stir in Rice Chex crumbs.
Cut in butter until very fine crumbs.
Press mixture firmly into pan.
Bake 12 minutes.
Meanwhile, prepare topping.
Combine all ingredients.
Mix until well blended.
Pour over hot base.
Return to oven for additional 15- 20 minutes or until top is set but not browned.
Cool.
Sprinkle with confectioners' sugar.
Cut into bars.
