| Catsup | 60 Milliliter | |
| Brown sugar | 45 Milliliter | |
| White vinegar | 45 Milliliter | |
| Ground ginger | 1 Milliliter | |
| 5 ml soya sauce | ||
| 1 ml each of paprika, chili powder, garlic powder, onion powder, thyme, basil, oregano, salt and pepper | ||
| 1 -1 kg swordfish, cut in pieces | ||
| 125 ml flour, all purpose | ||
| Safflower oil | 60 Milliliter | |
Directions
In a mixing bowl combine the concentrate, catsup, sugar, vinegar, ginger, soya and seasonings.
Dredge the swordfish in the flour.
Heat the oil in a large kettle or Dutch oven, brown the swordfish.
Drain any excess oil.
Pour the sauce over the swordfish, cook over low heat for 15 minutes covered.
