Lemon Polenta Waffles Recipe
The lemon polenta waffles are special waffles made with cornmeal. Prepared with a batter of eggs, buttermilk or yogurt along with lemon peel for flavor, the lemon polenta waffles can be served as breakfast.
Ingredients

| 1 1/4 cups buttermilk or low-fat yogurt 300 mL | ||
| All purpose flour | 1 Cup (16 tbs) | |
| Cornmeal | 1/2 Cup (16 tbs) | |
| Granulated Sugar | 2 Tablespoon | |
| Lemon peel | 1 Tablespoon, grated | |
| Baking soda | 1 Teaspoon | |
| 1 tbsp soft margarine, melted 15 mL | ||
Directions
In bowl, whisk eggs with buttermilk.
In second bowl, combine flour, cornmeal, suger lemon peel and baking soda.
Stir dry ingredients into egg mixture.
Whisk in melted margarine.
Heat waffle iron for about 5 minutes, or according to manufacturer's directions.
Spoon batter into centre of hot grill and close.
Cook for a couple of minutes, or until waffles are done.
