Lemon Pepper Muffins Recipe

Lemon pepper muffins are delicate and spicy little bakes flavored with lemon zest and freshly ground black pepper. Baked with added lemon juice and milk, this muffin recipe will surely get your taste buds tingling.

Ingredients

 
2 cups all-purpose flour 500 mL
 
1/2 cup granulated sugar 125 mL
 
2 tsp baking powder 10 mL
 
1/2 tsp baking soda 2mL
 
1/2 tsp salt 2 mL
 
3/4 tsp freshly ground blackpepper 4mL
 
Finely grated zest of1 lemon
 
1 cup milk 250 mL
 
Juice of 1 lemon
 
1 egg
 
1/3 cup butter, melted 75 mL

Directions

In a large bowl, combine flour, sugar, baking powder, baking soda, salt and pepper.
Stir until well blended.
Add lemon zest and mix until well coated.
Make a well in the center.
In another bowl, whisk together milk, lemon juice and egg.
Add to dry ingredients at once.
(Milk mixture may look curdled.) Stir just until well blended.
Add butter and blend together.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 to 20 minutes or until toothpick inserted in center comes out clean.
HINT: Freeze grated zest from lemons and oranges in small plastic yogurt cups.
