Lemon Oat Blueberry Muffins Recipe
lemon oat blueberry muffins are refreshingly flavorful muffins that reminds me springtime. The natural taste of fresh bluberries along with grated lemon zest, makes this muffin very special. Bake these up and enjoy the lovely smell that fills u the house as these beauties bake in the oven.
Ingredients
1 cup all-purpose flour 250 mL
3 tsp baking powder 15 mL
1/2 ftp salt 2mL
1/4 ftp nutmeg lmL
3/4 cup packed brown sugar 175 mL
3/4 cup rolled oats 175 mL
Finely grated zest of1 lemon
1 egg
1/4 cup vegetable oil 50 mL
1 cup milk 250 mL
1 can (14oz[398mL]) blueberries,drained and patted dry
Directions
In a large bowl, combine flour, baking powder, salt, nutmeg and brown sugar.
Stir with a fork until well blended.
Add oats and lemon zest.
In another bowl, whisk together egg, oil and milk.
Add to flour mixture, stirring just until blended and moistened.
Fold in blueberries.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 to 20 minutes.
