Lemon Glazed Apricots Recipe
Ingredients
| 6 ripe apricots, washed and split | ||
| 1/4 cup lemon curd | ||
| Ground ginger | 1/2 Teaspoon | |
| Sugar | 3 Tablespoon | |
Directions
Preheat your oven to 375°F.place the apricot halves in an oven-safe flat dish.
Combine the lemon curd and ginger in a small bowl and spoon it over the apricots.
Sprinkle the sugar on top, and place the apricots in the oven for about 2 minutes, until just warm.
Transfer the dish to the broiler section, about 2 to 3 inches from the heat and broil, just until the tops are glazed.
Watch carefully to prevent burning.
Remove the dish from the broiler and serve 3 apricot halves per person.
Sometimes I serve the apricots with a scoop of vanilla ice cream in the center.
They also provide a nice accent when served with roasted meats or fowl.
If you have a baked tart shell double this recipe, spread another 3/4 cup of lemon curd over the tart shell, and arrange the baked apricots on top.
