Lemon-Glazed Apple Oatmeal Muffins Recipe
lemon glazed apple and oatmeal muffins is a lusciuous glazed muffin recipe that combines the flavor of apples with lemon. Ingredients

| Milk | 1/2 Cup (16 tbs) | |
| Vegetable oil | 1/4 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| 3/4 cup quick-cooking oats 175 mL | ||
| 1 cup finely chopped apples 250 mL | ||
| Nuts | 1/2 Cup (16 tbs), chopped | |
| Icing Sugar | 1/2 Cup (16 tbs) (LEMON GLAZE:) | |
| Lemon juice | 1 Tablespoon (LEMON GLAZE:) | |
| 1 tbsp butter or margarine,melted 15 mL | ||
Directions
In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg.
In a large bowl, beat egg.
Add milk, oil and lemon juice.
Stir in oats and mix well.
Add flour mixture, blending well.
Add apples and nuts, stirring just until moistened and lumpy.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes or until golden brown.
Meanwhile, in a small bowl, combine icing sugar, juice and butter.
Remove muffins from tin and place on a plate.
Drizzle with lemon glaze.
HINT: If you reduce or eliminate salt in recipes, use more herbs and spices to enhance the flavor.
