Lemon Fluff Pie Recipe

Ingredients
4 eggs, separated
1 1/3 cups sugar, divided
1/4 teaspoon nutmeg
1/4 cup lemon juice
2 teaspoons grated lemon rind
1 9-inch baked pie shell
1/2 cup coconut
Directions
Beat egg yolks in top of double boiler until thick and lemon colored.
Add 1/2 cup sugar, gradually, beating well after each addition.
Cook over hot water until mixture begins to thicken around sides of pan, about 5 to 7 minutes.
Blend in nutmeg, lemon juice and lemon rind.
Continue cooking until thick, about 10 minutes, stirring constantly.
Beat egg whites until foamy.
Add remaining 1/2 cup sugar gradually, beating well after each addition.
Continue beating until egg whites stand in heavy peaks when beater is raised.
Blend 1/3 of this meringue into lemon mixture.
Cool.
Turn into pie shell.
Fold coconut into remaining meringue.
Spread on top of filling.
Bake in a hot oven (425° F) 5 to 10 minutes, or until lightly browned.
Makes one 9-inch pie.
