Lemon Filled Cookies Recipe

Ingredients
Sugar - 1/2 cup
Cornstarch - 2 tablespoons
Salt - 1/4 teaspoon
Orange juice - 1/2 cup
Lemon rind - 1 tablespoon, grated
Lemon juice - 1/4 cup
Margarine - 3/4 cup
Sugar - 1 cup
egg – 1, well beaten
Vanilla - 11/2 teaspoons
Sifted flour - 2 1/2 cups
Baking powder - 3/4 teaspoon
Salt - 1/4 teaspoon
Directions
GETTING READY
1) Grease a baking sheet.
MAKING
2) In a saucepan, combine 1/2 cup sugar, cornstarch, salt, orange juice, lemon rind, lemon juice and 1 tablespoon.
3) Allow to boil for 1 minute, while stirring constantly.
4) Refrigerate.
5) Combine and cream together the margarine and sugar till light and fluffy.
6) Add in the egg and vanilla and mix well.
7) Combine and sift the flour, baking powder, and salt.
8) Add into the creamed mix and blend well.
9) Refrigerate.
10) Lightly flour a board.
11) Place the dough and roll out to a 1/8 inch thick.
12) Cut using a fluted cookie cutter.
13) Add a spoonful of lemon filling over each cookie half.
14) Cut 2 gashes in other rounds and add over filling.
15) Gently lift points to keep the filling visible.
16) Using a fork, press together the edges.
17) Arrange on the baking sheets and bake in the oven at 375°F for 8 to 10 minutes.
