Lemon Date Loaf Recipe
The lemon date loaf is a sweet and flavorful bake made with tangy lemon flavor and vanilla. Baked with brown sugar, flour, egg and lemon juice and rind for flavor along with dates, walnuts and vanilla, the lemon date loaf can be served as dessert.
Ingredients
1 cup cut-up dates
1 tsp. soda
3/4 cup boiling water
3/4 cup brown sugar
1 egg, beaten
1 tsp. grated lemon rind
1 tsp. lemon juice
1 1/2 cups sifted all-purpose flour
1 tsp. baking powder
Pinch of salt
1/2 cup walnuts (if desired)
3 tbs. melted butter
1 tsp. vanilla
Directions
Sprinkle soda over the dates, then add the boiling water.
Cool.
Combine brown sugar, egg, lemon rind and juice.
Sift the dry ingredients together and add alternately with the date mixture.
Add nuts, melted butter and vanilla.
Bake in a greased loaf pan at 350F for about 40 minutes.
