Lemon Cookies Recipe
This is a kick ass recipe for Lemon Cookies which will knockout anyone who eats it. Excuse my French please. Lemon Cookies makes a yummy Snack. Include this Lemon Cookies recipe in your most-liked list and make it as many times you wish to.
Ingredients
1 tablespoon plus
2 teaspoons margarine
1/4 teaspoon grated lemon peel
1/3 cup plus
2 teaspoons cake flour
2 1/2 teaspoons granulated sugar
1 1/2 teaspoons freshly squeezed lemon juice
Directions
Preheat oven to 300°F.
In small mixing bowl, using electric mixer, combine all ingredients except flour, beating until light and smooth; add flour and beat until flour has been incorporated and mixture forms sticky batter.
Using wet hands, roll batter into 8 small balls (about 1 tablespoon batter for each ball); arrange balls on nonstick baking sheet, leaving about 2 inches between each.
Using tines of fork, lightly press each ball down to flatten, then press down lightly in opposite direction to create a checkerboard pattern.
Transfer baking sheet to lowest oven rack and bake until edges of cookies are lightly browned, about 15 minutes; using a spatula, remove cookies to wire rack to cool.
